8 oz pasta (fusilli or penne)
1 block of feta cheese
1 pint cherry tomatoes
1 cup mushrooms (sliced)
3 garlic cloves (minced)
1/4 cup olive oil
1 tsp dried oregano
Salt & pepper
Directions
- Preheat the oven to 400°F (200°C).
- Place the block of feta in the center of a baking dish. Surround with cherry tomatoes, mushrooms, and garlic.
- Drizzle with olive oil and sprinkle oregano, salt, and pepper.
- Bake for 25 minutes until the tomatoes burst.
- Meanwhile, cook pasta according to the package instructions.
- Remove the dish from the oven, mix everything, then toss in the cooked pasta.
- Serve hot.
