Ingredients

  • 8 oz pasta (fusilli or penne)

  • 1 block of feta cheese

  • 1 pint cherry tomatoes

  • 1 cup mushrooms (sliced)

  • 3 garlic cloves (minced)

  • 1/4 cup olive oil

  • 1 tsp dried oregano

  • Salt & pepper

Directions

  • Preheat the oven to 400°F (200°C).
  • Place the block of feta in the center of a baking dish. Surround with cherry tomatoes, mushrooms, and garlic.
  • Drizzle with olive oil and sprinkle oregano, salt, and pepper.
  • Bake for 25 minutes until the tomatoes burst.
  • Meanwhile, cook pasta according to the package instructions.
  • Remove the dish from the oven, mix everything, then toss in the cooked pasta.
  • Serve hot.
