Ingredients

  • 1 large sweet potato (cut into 1/4 inch slices)

  • 1 ripe avocado

  • 1 tbsp olive oil

  • 1/2 tsp sea salt

  • 1/4 tsp black pepper

  • 1/4 tsp red pepper flakes (optional)

  • Juice of 1/2 lemon

  • Fresh herbs (like cilantro or parsley) for garnish

Directions

  • Preheat the oven to 400°F (200°C).
  • Wash the sweet potato and slice it lengthwise into 1/4-inch thick pieces. Brush each slice with olive oil and sprinkle a little salt and pepper.
  • Place sweet potato slices on a baking sheet and bake for 20-25 minutes, flipping halfway through, until tender and lightly browned.
  • While the sweet potatoes are baking, mash the avocado in a bowl with lemon juice, salt, and pepper. If desired, add red pepper flakes.
  • Once the sweet potato slices are done, remove them from the oven. Spread the mashed avocado on each slice.
  • Top with fresh herbs, cherry tomatoes, radishes, or a poached egg for extra flavor and texture.
  • Serve immediately while warm.
