Spinach & Tortellini Casserole
Ingredients:
- 1 package cheese tortellini (fresh or frozen)
- 3 cups fresh spinach
- 1 cup ricotta cheese
- 2 cups marinara sauce
- 1 cup mozzarella cheese, shredded
- ½ cup parmesan cheese, grated
- 1 garlic clove, minced
- Olive oil
- Salt and pepper
Time:
40 minutes.
Steps:
- Preheat oven to 375°F (190°C). Cook tortellini according to package instructions.
- Sauté garlic in olive oil, then add spinach and cook until wilted.
- In a large bowl, mix cooked tortellini, spinach, ricotta, and marinara sauce.
- Transfer to a greased casserole dish and top with mozzarella and parmesan.
- Bake for 20-25 minutes until bubbly and golden.
Tips:
- Add red pepper flakes for a spicy kick.
- You can also use meat-filled tortellini for added protein.
