Spinach & Tortellini Casserole

Ingredients:

  • 1 package cheese tortellini (fresh or frozen)
  • 3 cups fresh spinach
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated
  • 1 garlic clove, minced
  • Olive oil
  • Salt and pepper

Time:

40 minutes.

Steps:

  1. Preheat oven to 375°F (190°C). Cook tortellini according to package instructions.
  2. Sauté garlic in olive oil, then add spinach and cook until wilted.
  3. In a large bowl, mix cooked tortellini, spinach, ricotta, and marinara sauce.
  4. Transfer to a greased casserole dish and top with mozzarella and parmesan.
  5. Bake for 20-25 minutes until bubbly and golden.

Tips:

  • Add red pepper flakes for a spicy kick.
  • You can also use meat-filled tortellini for added protein.
