  • 4 cups carrots, sliced

  • 1 cup cheddar cheese, shredded

  • ½ cup breadcrumbs

  • 2 eggs, beaten

  • 1 cup milk

  • 1 onion, diced

  • 2 tablespoons butter

  • Salt and pepper

Directions

  • Preheat oven to 350°F (175°C). Cook carrots in boiling water until tender, about 10 minutes.
  • In a skillet, sauté onion in butter until soft.
  • Mix cooked carrots, onions, eggs, milk, cheddar cheese, salt, and pepper.
  • Transfer to a greased dish and top
