  • 8 oz pasta (spaghetti or linguine)

  • 1 medium zucchini, spiralized or thinly sliced

  • 2 tbsp olive oil

  • 1 lemon (juice & zest)

  • 1/2 cup heavy cream

  • 1/4 cup Parmesan cheese

  • Salt & pepper

  • Fresh basil for garnish

Directions

  • Cook pasta according to package instructions.
  • Heat olive oil in a pan, sauté zucchini for 3-4 minutes.
  • Stir in lemon juice, zest, and heavy cream, simmer until the sauce thickens.
  • Toss in cooked pasta and Parmesan cheese.
  • Serve garnished with fresh basil.
