Ingredients

6 large eggs

1/2 cup milk (preferably whole milk or any milk of choice)

1/4 cup heavy cream (optional, to give extra richness)

1 cup cherry tomatoes, cut in half

1 cup fresh mozzarella cheese, diced or sliced

1/2 cup fresh basil leaves, chopped (reserve some for garnish)

1/4 cup parmesan cheese

Salt and pepper, to taste

1 tablespoon olive oil (to grease the baking dish)

1/4 teaspoon dried oregano or Italian seasoning (optional)

Steps to Cook Crustless Caprese Quiche

Step no. 1

Preheat the oven:

Preheat your oven at 180 Degree Celsius (350 Degree Fahrenheit). Spread a thin layer of olive oil onto the bottom and around the sides of the pie dish or quiche pan.

Step no. 2

Prepare the filling ingredients:

Slice the cherry tomatoes in half and chop the fresh basil. Cut or tear the fresh mozzarella cheese into chunks. Optionally, you can pat them with paper towels in order to remove excess moisture.

Whisk the eggs and dairy:

In a medium sized bowl, whisk together eggs, milk, and heavy cream (if you are using any) until combined. Add salt, pepper, and oregano or Italian seasoning (if desired).

Constructing the quiche:

Filling the pie crust scatter the tomatoes, cheese cubes and chopped basil into the bottom of a prepared pie crust.

Pour the egg mixture:

Pour very gently the egg mixture onto the tomato, cheese and basil layers. Lightly move the dish so that all layers blend and egg wash covers every component.

Sprinkling the cheese:

Add the grated parmesan cheese on top to give flavor and prepare for the browning of the top crust.

Putting the quiche in the oven:

Insert the quiche into the oven and allow baking for 30-35 minutes or till the inside is firm to the center and the top part is slightly browned. You can use a knife and insert it in the center, when you pull it out it should be dry and clean.

Chilling and serving:

When predicting the time when quiche would be done, take it out of the oven and rest for a few minutes, then cut it to the desired portion. Serve the quiche with extra fresh basil leaves on top.

Tips for Crustless Caprese Quiche

Fresh mozzarella vs. shredded: 

The cooking method is lovely with the use of fresh mozzarella since it tends to give the quiche a creamy feel but for the fast option, fresh mozzarella can be replaced with the shredded mozzarella.

Prepare ahead:

 It is possible to prepare this quiche beforehand and refrigerate it for up to 3 days. When serving, you can simply heat it through in the oven or microwave.

Add more:

 Feel free to make it more nutritious by adding more vegetables like spinach, mushroom, onions, etc along with the spinach and cheese in the quiche.

For denser:

 If you like a denser quiche feel free to add one more egg or decrease the amount of milk a little bit.
