  • 1 package frozen cauliflower rice

  • 2 eggs (beaten)

  • 1 cup mixed vegetables (frozen)

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • Green onions (for garnish)

Directions

  • Heat sesame oil in a pan, add mixed vegetables, and cook for 3-5 minutes.
  • Push vegetables to the side, add beaten eggs, and scramble.
  • Stir in cauliflower rice and soy sauce. Cook until everything is heated through.
  • Garnish with green onions.
