Spinach, Feta & Artichoke Tater Tot Casserole

Ingredients:

  • 1 package frozen tater tots
  • 2 cups fresh spinach, chopped
  • 1 cup artichoke hearts, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup Greek yogurt
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp oregano
  • Olive oil, salt, and pepper

Time:

45 minutes.

steps:

  1. Preheat oven to 400°F (200°C).
  2. Sauté onion and garlic in olive oil, then add spinach and artichoke hearts. Cook until spinach wilts.
  3. Mix spinach mixture with Greek yogurt and feta.
  4. Layer mixture in a casserole dish and top with tater tots.
  5. Bake for 25-30 minutes until tater tots are crispy.

Tips:

  • For extra crunch, broil the casserole for the last 5 minutes.
  • Add cooked chicken for a non-vegetarian option.
