1 package frozen cauliflower rice (about 12-16 oz)
1 cup mixed vegetables (such as peas, carrots, and bell peppers; fresh or frozen)
2 cloves garlic (minced)
1 small onion (diced)
3 tbsp soy sauce (or tamari for gluten-free)
1 tbsp sesame oil (or any vegetable oil)
1 tsp ginger (grated or minced, optional)
2 green onions (sliced, for garnish)

Directions
- In a large skillet or wok, heat the sesame oil over medium heat.
- Add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
- Stir in the mixed vegetables and cook for another 5 minutes until heated through and tender.
- Push the vegetable mixture to the side of the pan and add the frozen cauliflower rice. Stir-fry for 5-7 minutes until the cauliflower rice is heated through and slightly crispy.
- Add soy sauce, grated ginger (if using), salt, and pepper. Mix everything together and cook for an additional 2 minutes.
- Remove from heat, garnish with sliced green onions, and serve hot.
