Ingredients

  • 1 package frozen cauliflower rice (about 12-16 oz)

  • 1 cup mixed vegetables (such as peas, carrots, and bell peppers; fresh or frozen)

  • 2 cloves garlic (minced)

  • 1 small onion (diced)

  • 3 tbsp soy sauce (or tamari for gluten-free)

  • 1 tbsp sesame oil (or any vegetable oil)

  • 1 tsp ginger (grated or minced, optional)

  • 2 green onions (sliced, for garnish)

  • Salt and pepper (to taste)

Directions

  • In a large skillet or wok, heat the sesame oil over medium heat.
  • Add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
  • Stir in the mixed vegetables and cook for another 5 minutes until heated through and tender.
  • Push the vegetable mixture to the side of the pan and add the frozen cauliflower rice. Stir-fry for 5-7 minutes until the cauliflower rice is heated through and slightly crispy.
  • Add soy sauce, grated ginger (if using), salt, and pepper. Mix everything together and cook for an additional 2 minutes.
  • Remove from heat, garnish with sliced green onions, and serve hot.
