1/2 cup water kefir grains
4 cups filtered water (chlorine-free)
1/4 cup organic sugar (such as cane sugar or brown sugar)
1/2 lemon (sliced, optional for flavor)
1-2 tablespoons dried fruit
1/4 teaspoon baking soda
Directions
- In a large glass jar, dissolve the organic sugar in 4 cups of filtered water. Stir until the sugar is fully dissolved.
- Once the sugar water is ready, add the water kefir grains to the jar.
- If desired, add sliced lemon and dried fruit for additional flavor. You can adjust the amount based on your preference.
- Cover the jar with a cloth or coffee filter and secure it with a rubber band. This allows air to flow in while keeping dust and insects out.
- Place the jar in a warm, dark place (around 68-85°F or 20-30°C) for 24 to 48 hours.
- After fermentation, strain the water kefir through a fine mesh strainer into a clean container to separate the grains from the liquid.
- The strained water kefir can be enjoyed plain, or you can bottle it with additional flavorings (like fresh fruit or herbs) and let it ferment for another 12-24 hours for carbonation.
- Rinse the water kefir grains with fresh filtered water and store them in sugar water for the next batch.
